Attiéké with Grilled Fish: The Traditional Ivorian Recipe Step by Step

Attiéké, Ivorian cassava semolina

Attiéké (pronounced "at-CHEH-keh") is a fermented semolina made from grated and pressed cassava, originating from Côte d'Ivoire, particularly the lagoon region of the Alladian people. It is one of the most popular dishes in West Africa: light, slightly tangy thanks to fermentation, and quick to prepare once you have the raw or pre-cooked semolina.

Attiéké is now easy to find in France, on Afasin, packaged as pre-cooked semolina (ready in 5 minutes steamed) or as a vacuum-packed fresh version.

Ingredients for 4 people

For the attiéké

  • 400g attiéké (pre-cooked cassava semolina)
  • Salt
  • A drizzle of vegetable oil (optional)

For the grilled fish

  • 2 whole carp (or tilapia, grouper, mackerel)
  • 3 crushed garlic cloves
  • 1 red onion, sliced
  • 2 ripe tomatoes
  • 1 deseeded chilli (to taste)
  • Juice of 2 limes
  • 1 fish stock cube
  • 2 tbsp peanut oil
  • Salt, black pepper

For the tomato-onion sauce (topping)

  • 3 ripe tomatoes
  • 2 onions
  • 2 tbsp red palm oil (or vegetable oil)
  • Salt, pepper, stock cube

Method

Step 1: marinate the fish (30 min to 2h)

Clean the fish and score both sides (3–4 deep cuts to let the marinade penetrate). Prepare the marinade: crushed garlic, sliced onion, lime juice, chilli, salt, pepper and crumbled stock cube. Rub generously over the fish, including inside the cuts. Marinate in the fridge.

Step 2: grill the fish

Heat a grill, griddle pan or barbecue. Lightly oil the surface. Sear the fish over high heat for 5–7 minutes per side until the skin is crispy and slightly charred. The flesh should come away easily from the bone.

Oven tip: bake at 200°C (390°F) under the grill setting for 15–20 minutes, flipping halfway through.

Step 3: make the tomato sauce

Sauté the sliced onions in red palm oil over medium heat. Add the crushed tomatoes and chilli, season with salt. Let it stew for 15 minutes over low heat until thick. Adjust seasoning.

Step 4: cook the attiéké

Pour the attiéké into a bowl, sprinkle with lightly salted water (3 tbsp per 400g), and fluff with a fork. Steam for 5 minutes in a couscoussier or microwave (3 min, stirring halfway). Fluff again and drizzle with a little oil.

Plating and serving

Mound the attiéké on a deep plate. Place the whole or portioned grilled fish on top, generously topped with the tomato sauce. Serve with lime wedges and fresh chilli.

Regional variations

  • Attiéké garba: the Abidjan street-food version with canned tuna and raw onion — a popular meal for under 500 CFA francs
  • Attiéké with smoked mackerel: made with smoked fish, quicker to prepare
  • Vegetarian attiéké: with palm-nut sauce or African-style ratatouille

Nutritional value of attiéké

Attiéké is naturally gluten-free, rich in resistant starch (thanks to fermentation), and has a lower glycemic index than white rice. It's an excellent alternative for people with gluten intolerance or anyone looking to diversify their starches.
