What is fonio?
Fonio (Digitaria exilis) is the oldest grain cultivated in West Africa. These tiny grains have a mild, slightly nutty flavour. Steamed, fonio resembles couscous or fine semolina, with a light, fluffy texture.
There are two main varieties: white fonio (Digitaria exilis), widespread in Senegal, Guinea and Mali, and black fonio (Digitaria iburua), grown in Nigeria and Benin. White fonio is the most widely sold outside the African continent.
Origin and history
Fonio has been grown in West Africa for more than 5,000 years. It's mentioned in historical texts as a prized food in the kingdoms of Mali and Songhai. Long overshadowed by Western grains after colonisation, fonio is now enjoying a genuine revival, driven by African chefs and the healthy-eating movement.
Countries like Guinea, Senegal, Mali and Burkina Faso are the main producers. In Guinea, fonio is served at major ceremonies and family celebrations. It's considered a noble, ceremonial food in many cultures.
