How to reduce okra's slimy texture?

Okra's stickiness comes from the polysaccharides released during cooking. A few techniques to control it:

  • Dry it and don't wash before cutting — moisture activates the mucilage
  • Cook fast over high heat — pan-frying for 3–5 minutes keeps it crunchy

Ingredients (4 people): 500g beef, 300g fresh okra or 150g rehydrated dried okra, 1 onion, 2 tomatoes, 2 tbsp red palm oil, salt, pepper, stock cube, chilli.

Method: sauté the onion in palm oil, add the diced meat, sear for 5 minutes. Add the chopped tomatoes, chilli and stock. Cover with water and simmer for 30 minutes. Add the sliced okra, cook for a further 15 minutes. Serve with white rice or attiéké.

Kanja (Senegalese okra soup with smoked fish)
