Red Palm Oil: Benefits, Culinary Uses and Where to Buy in France

Everything about unrefined red palm oil: nutritional benefits, use in African cooking (sauce graine, ndolé, moambe) and buying guide in France.

What is red palm oil?

Red palm oil, known as unrefined palm oil or zomi in parts of West Africa, is extracted from the pulp of the oil palm fruit (Elaeis guineensis). Its distinctive orange colour comes from an exceptional concentration of beta-carotene, a natural precursor of vitamin A.

Not to be confused with refined white palm oil — nutritionally very different — red palm oil retains all of its natural nutrients thanks to artisanal or semi-industrial production.

Nutritional values and health benefits

A balanced fatty acid profile

Contrary to popular belief, red palm oil has an interesting lipid profile:

  • Palmitic acid (44%): saturated fatty acid
  • Oleic acid (38%): monounsaturated fatty acid, similar to olive oil
  • Linoleic acid (10%): essential omega-6

Rich in antioxidants

Red palm oil is one of the richest dietary sources of:

  • Carotenoids (beta-carotene, lycopene) — up to 15 times more than carrots
  • Tocotrienols — a rare form of vitamin E with neuroprotective properties
  • Coenzyme Q10

Studies published in the Journal of Nutritional Biochemistry suggest these antioxidants contribute to cardiovascular protection and a stronger immune system.

How to use red palm oil in African cooking

Signature dishes

Red palm oil is a foundational ingredient of West and Central African cuisine:

  • Peanut sauce (sauce graine) — a staple of Ivorian and Ghanaian cooking
  • Cameroonian ndolé — a stew of ndolé leaves with beef and shrimp
  • Egusi soup — a Nigerian soup made with pumpkin seeds
  • Banga soup — a Niger Delta soup
  • Moambe — Congolese chicken in palm-nut sauce

Practical tips

Red palm oil handles high-temperature cooking well thanks to its thermal stability. It has a characteristic woody, slightly earthy aroma. A few tips:

  • Start with small amounts — its flavour is strong
  • Pair it with onions, tomatoes and garlic to soften its intensity
  • Don't mix it with other neutral oils in the same dish
  • Store at room temperature, away from light (it solidifies below 25°C/77°F)
