Attiéké is one of the most widely eaten foods in Côte d'Ivoire. Light, tasty and naturally gluten-free, it fits into any cuisine.

What is attiéké?

Attiéké (pronounced atcheke) is a semolina made from fermented cassava, originating from Côte d'Ivoire. Its texture resembles couscous: grainy, light and slightly tangy. It's ready in a few minutes steamed and can be enjoyed hot or cold, as a side or a full meal.

Unlike classic cassava flour, attiéké undergoes a fermentation process that gives it a unique flavour while improving its digestibility. It's a very popular street food in Abidjan, served with grilled fish, onions and chilli.

Origin and history

Attiéké originates from the Lagoons region of Côte d'Ivoire, particularly from the Adjoukrou people. According to oral tradition, Adjoukrou women developed the cassava fermentation technique to create this unique semolina. Attiéké then spread throughout Côte d'Ivoire before becoming essential within the African diaspora in Europe.

In 2017, attiéké was added to Côte d'Ivoire's intangible cultural heritage list, an official recognition of its cultural and economic importance. Today, it's exported all over the world.
