Accra de Morue — Crispy Caribbean Fritters
Accras de morue (salt cod fritters) are THE essential Caribbean appetiser. Crispy outside, soft inside, and fragrant with Caribbean chilli and spring onion, they always disappear within minutes.

Desalt the cod: soak it in cold water for at least 12 hours, changing the water 3 times. Taste to check remaining saltiness.

Poach the cod for 10 minutes in gently simmering water. Drain, leave to cool, then finely flake, removing skin and bones.

Blend the onion, garlic, spring onion and chilli (deseeded for less heat). Mix with the flaked cod.

In a bowl, mix the flour and baking powder. Make a well, add the beaten eggs and milk gradually to form a thick batter. Fold in the spiced cod, season with pepper.

Heat the oil to 170°C. Using two spoons, shape small quenelles and drop them into the oil. Fry in small batches, 3-4 minutes, until golden.

Drain on kitchen paper. Serve immediately with a sauce chien (onion, chilli, lime, olive oil) or a ti-punch.
Astuces du chef
The secret to light accras: don't over-mix the batter (a few lumps are fine) and respect the oil temperature (170°C). Too hot, and they'll burn outside while staying raw inside. You can make the batter the night before and keep it in the fridge. For vegetarian accras, replace the cod with vegetables (pumpkin, chayote).

Cod is an excellent source of lean protein, omega-3 and vitamins B12 and D. Accras are fried, so calorific: about 280 kcal for 5 accras. Best enjoyed as an aperitif or light starter.
