Préparation

    Cut the meat into 4-5cm cubes. Heat the oil in a pot and brown the pieces on all sides over high heat. Set aside.

    In the same pot, fry the sliced onions and crushed garlic for 3 minutes. Add the tomato paste, mix and cook for 5 minutes.

    Return the meat to the pot. Dilute the peanut paste in 500ml of hot water while whisking, then pour over the meat. Add 500ml more water.

    Bring to the boil then reduce to low heat. Add the bay leaf, Maggi cube, salt and pepper. Simmer covered for 30 minutes.

    Add the carrots cut into thick rounds, the potatoes and sweet potatoes cut into cubes. Continue cooking for 30 minutes.

    The sauce should be thick and glossy, coating the meat. If too thick, add a little water. Taste and adjust the seasoning.

    Serve hot with white rice or fonio, generously drizzled with sauce.

Astuces du chef

Use 100% natural peanut paste with no added sugar. If the sauce is too oily at the end of cooking, skim off the excess oil that rises to the surface. Mafé is even better reheated the next day: the flavours deepen with time.

Mafé is very rich in protein and unsaturated fats (peanut). Peanuts provide vitamin E, magnesium, zinc and niacin. Root vegetables provide fibre and potassium. About 580 kcal per serving.
